We always enjoy a bit of the lovely Nigella Lawson and on her new show Nigellissima she made a Chocolate & Olive Oil cake. It looked relatively straight forward to make so I thought I'd give it a go.
Ingrediants needed were:
- 150ml of Olive Oil
- 50g of Cocoa Powder
- 125ml of Boiling Water
- 2tsp of Vanilla Extract
- 125g of Plain Flour
- 1/2tsp of Bicarbonate of Soda
- Pinch of Salt
- 200g Caster Sugar
- 3 Eggs
Thoroughly combine the cocoa powder, boiling water & vanilla extract in one bowl. Then the flour, salt and bicarbonate of soda in another. And the eggs, caster sugar and olive oil in a third bowl.
Fully mix all three bowls into one big bowl and then pour into a greased cake tin or oven proof dish. Bake for about 40 mins in a preheated oven to 170C. My version didnt turn out quite as good looking as Nigella's (as you can see from the photo above), it rose and cracked a lot more, but still tasted great! We love a bit of Nigella. In a word its Nigellissima!!!
